Meg has been box-packing at Regather HQ over the winter. Now, with the growing season in full throttle, she’s needed exclusively back on the farm. We will miss her! Whilst packing, she was telling us about her signature potato salad and it sounds fantastic, so it had to be shared. As for quantities, just go by your taste and judgement – but start modestly with the capers, sample the salad and add more if you want.

Meg’s Potato Salad

    Ingredients

  • New potatoes, cooked
  • Vegan mayo or yogurt or a mixture of the two
  • Your favourite mustard - Meg likes Dijon
  • Spring onions, chopped
  • Cucumber, finely diced (remove seeds to avoid excess moisture in the salad)
  • Pickled gherkins, finely diced
  • Capers, if you fancy
  • Salt and plenty of black pepper

    Method

  1. Put the potatoes in a large serving or mixing bowl and add all the other ingredients.
  2. Gently combine until everything is evenly distributed.
