Sauteed green beans with tomato and onion

A lovely simple summer recipe from our very own green-fingered gardening guru Fran Halsall this week. Fran runs the Lansdowne Estate Gardening Club on Sunday mornings – community gardening workshops with Regather’s neighbours. You can see the fruits of their work in the raised beds and green spaces around our premises in Sharrow as well as new planting areas on the Estate itself. Check out more info and pics here:

“The good thing about this recipe is that you can be fast and loose with bean and tomato quantities.  It will still taste good.  I also sometimes bump the protein up by adding in some lightly toasted chopped almonds just before serving. Which makes it slightly creamy. Enjoy.”

  • 1 finely sliced onion
  • 3 to 4 cloves garlic
  • 200g finely sliced green beans / French beans
  • 100g fresh tomatoes, chopped into quarters
  • small handful basil
  • 2 tbsp oil
  • salt
  • pepper
  • pinch of sugar

  1. Sauté the onion in oil on a low heat in a small-medium saucepan with the lid on.
  2. When soft and golden, add sliced/chopped beans, season with salt and pepper and replace the lid.
  3. Sauté for another 5 minutes, keeping the lid on. Add in the chopped toms, replace lid.
  4. Meanwhile finely grate the garlic and add into the pan with the sugar. Re-cover with lid.
  5. Sauté for another 3 minutes with lid on, add shredded basil leaves. Serve.
